Fried Eggs

Fried eggs are one of the easy breakfast ideas from Nigeria. You could serve with bread, yams or even noodles.

When you are running late to meet up with office hours, this recipe will save you lots of headaches. 😀

I made this for myself this morning; it was a quick fix. I eat this kind of food when I am in a hurry to meet up with an appointment.

In most cases, I combine the fried egg with sliced bread and serve with tea, as you can see below.

Breakfast with Egg

Not completely a healthy option, it sits somewhere at the bottom of my food menu. According to my article on healthy Nigerian foods – Fried foods are not to be consumed more than thrice in a week by grown-ups. 😀

But that’s a story for another day.

While there are hundreds of breakfast ideas in Nigeria, this still takes the cake.

Basically, we never serve fried eggs alone in Nigeria. I always pair it with other foods like bread, fried ripe plantain, noodles or even boiled white yams.

Eggs are one of the easiest breakfast recipes in Nigeria.

I fry anything between 2 and 4 eggs, depending on the number of persons and size of the frying pan.

Two fried eggs are usually for one person.

Ingredients for egg

4 Fresh eggs
50 ml Vegetable oil
1/2 cup chopped tomatoes
Small chopped onions
1 sliced pepper (scotch bonnet)
Salt to taste
Seasoning cube (a pinch)

I like to fry eggs with lots of onions since I learned about the health benefits of onions. It is also good to eat as many vegetables as you can take.

How I Fried Eggs With Oil

Step 1
Heat your frying pan for a minute then add 50 ml of vegetable oil, allow to heat for 30 seconds before adding the sliced onions, then tomato/pepper as well.

Fry for 5 minutes before spraying a pinch of salt (to taste), then about a half of seasoning cube (I prefer less)

Stir, and then make sure they spread evenly it on the frying pan and boiling in very little oil. Then pour in the (already broken and mixed eggs) to cover the onions, tomato combination.

Allow frying for a minute before flipping.

Allow another 1 minute.

Flip. Flip again. 😀

Serve with bread and tea/pap.

Equipment

  • Frying pan

Ingredients

  • 4 Fresh eggs
  • 50 ml Vegetable oil
  • 1/2 cup chopped tomatoes
  • Small chopped onions
  • 1 sliced pepper scotch bonnet
  • Salt to taste
  • Seasoning cube a pinch

Instructions

    • Fry the Onions, sliced tomatoes and peppers in a frying pan using 50ml of vegetable oil.
    • Fry for 5 minutes while stirring continuously. You don’t want it burned.

  • Sprinkle a pinch of seasoning cube and salt to taste.
  • Stir, and then make sure it is spread evenly on the frying pan and boiling in very little oil. Then pour in the (already broken and mixed eggs).
  • Allow some minutes of frying before you flip.
  • Allow 1 minute
  • Flip again. ?
  • Serve fried eggs with bread and coffee
